This is a yummy, low carb crumble that is equally delicious as a warming breakfast or a dessert to share with friends. Perfect for balanced blood sugar levels.
For busy winter mornings I prep this the night before and set the timer on my oven so that it is ready as soon as we have got up.
Crumble Ingredients
• 1/2 cup coconut oil
• 180g ground almonds
• 50g flaked almonds
• 1 tbsp cinammon
• 1 tsp nutmeg or ginger
• 1 1/2 tsp vanilla extract
• 1 pinch sea salt
Pears
• 1kg pears, cored and chopped
• 1 tbsp water
• 1/2 tsp orange zest, grated
Method
1. Preheat the oven to 180C. 2. Put the chopped pears and the water into a saucepan, cover with a lid and cook gently on a medium heat for approximately 8 minutes until softened but still retaining colour and bite. 3. Butter the bottom of an 8×8 inch ovenproof dish and fill with the cooked pears. 4. Use the saucepan to melt the coconut oil. 5. Mix the rest of the crumble ingredients in a bowl and then add the melted coconut oil. Mix in with a fork until evenly distributed. Chill or freeze the topping if you have time. 6. Distribute the topping mixture over the pear and bake until golden (20-30 minutes).
