Ingredients
2 Cinnamon Sticks, broken into pieces 4 Cloves 6 Cardamon Pods, seeds only 30g Fresh Ginger, grated ½ tsp Ground Ginger 1 lemon, juice and zest 500g Raspberries, fresh or frozen 1 litre Water Manuka Honey Juice of Half a Lemon Cold pressed apple juice (to taste)
Method
Put the cinnamon, cloves, cardamom seeds, ginger, lemon juice, raspberries and water into a pan, bring to the boil and then simmer for 20 minutes.
Allow to cool a little and then strain through a sieve.
Dilute with cold pressed apple juice (I use about half and half).
Add lemon juice and Manuka honey to taste.
