125g carrots 70g coconut sugar 70g butter 100g Spelt wholemeal flour 1 tsp cinammon 1 tsp baking powder 1 egg 60g sultanas
Method
Heat the oven to gas 6, 200°CCream the butter and sugarMix in the flour, baking powder and cinammonMix in the eggAdd the carrot and sultanas and stir againDivide the mixture into cupcake casesBake in the oven for 15-20 mins
