Non Alcoholic ‘Mulled Wine’

I absolutely love mulled wine and this berry tonic with Christmas spices is a fantastic warming alternative at this time of year. The antioxidants in the berries together with the plant nutrients in the ginger, the vitamin C in the lemon and the antibacterial properties of the Manuka honey all support the immune system. Ive made this today as I am hoping it will help chase away the cold that appears to be threatening to join me for Christmas.

Ingredients

2 Cinammon Sticks, broken into pieces
4 cloves
6 cardamon pods, seeds only
30g fresh ginger, grated
½ tsp ground ginger
1 lemon, juice and zest
500g Raspberries, fresh or frozen
1 litre water
Manuka Honey
Juice of half a lemon
Cold pressed apple juice

Method

  1. Put the cinnamon, cloves, cardamom seeds, ginger, lemon juice, raspberries and water into a pan, bring to the boil and then simmer for 20 minutes.
  2. Allow to cool a little and then strain through a sieve.
  3. Dilute with cold pressed apple juice (I use about half and half)
  4. Add lemon juice and Manuka honey to taste.
