I absolutely love these lemon and coconut bliss balls. They taste fantastic, are really quick and simple to make and they only contain 6 ingredients.
They are high in protein, fibre and good fats and so they make a great sweet treat that wont cause wild fluctuations in your blood sugar levels.
1 cup raw cashew nuts
1 cup dessicated coconut
zest of 1-11/2 large lemon
1/4 tsp vanilla extract
pinch of sea salt
2 tbsp maple syrup
Extra dessicated coconut for rolling
- Place the ingredients in your food processor and mix until the mixture is smooth and the nuts and coconut have broken down
- Shape the mixture into balls
- Roll in coconut and place in the fridge to firm up
- Eat and enjoy!

Really yummy. Had to adapt slightly as only had limes but they were very nice and popular!
