Carrot Cake

These are lovely moist cupcakes which are super easy to make. They are a good source of fibre which helps to support a healthy digestive tract and stools. Spelt is an unrefined wheat grain which is rich B vitamins, protein and fibre. Fibre helps to balance blood sugar levels supporting constant energy levels and healthy weight management.

​125g carrots
70g coconut sugar
70g butter
100g Spelt wholemeal flour
1 tsp cinammon
1 tsp baking powder
1 egg
60g sultanas


  • Heat the oven to gas 6, 200°C
  • Cream the butter and sugar
  • Mix in the flour, baking powder and cinammon
  • Mix in the egg
  • Add the carrot and sultanas and stir again
  • Divide the mixture into cupcake cases
  • Bake in the oven for 15-20 mins
